Lower Fat Lasagna
Prepare lasagna noodles as per instructions on box.
Filler: I package of Firm Tofu, remove as much water as possible by wrapping in paper towel and putting weight on top, change towel once or twice. Dice tofu, put in food processor. Add 8 oz low fat ricotta cheese, 1 egg, salt, pepper, parsley, oregano, basil, garlic powder, onion powder. Blend until smooth. 8-10 ounces spinach, stems removed, rough chop. 1 jar of your favorite tomato sauce. large carrot shredded, mozzarella cheese and Parmesan cheese Sauce in bottom pan, place 3 noodles. start layering with tofu mix first, adding carrots, spinach, sauce and cheeses. Continue to layer until complete. Top with just sauce, then cheese. Bake 350 20 minutes covered. Uncover Bake additional 10 minutes. Let rest 10 minutes before serving.
